In my campaign to get my kids to know some cooking recipes by heart and to hopefully be able to just whip them up whenever the occasion arises (I think that might be wishful thinking ;)), I stumbled over a recipe for a timeless mousse au chocolat on the back of a chocolate tablet.
We have been making this all summer long and have tweaked the recipe a little bit. If I may say so, the result is sensational and a guaranteed success! Violette can now make this unaided, bar one important step: the whipping of the egg whites. If there is no mixer in the house, this part requires serious muscle!
Ingredients:
-1 tablet of black chocolate over 75% chocolate (in France a tablet weighs 200g)
-6 eggs
-3 tablespoons of sugar (the original recipe only suggested two but the girls thought this was a bit to bitter for their liking)
Melt the chocolate by placing it in a small pan and placing that pan into a larger pan of boiling water. Separate the eggs and beat the egg whites until stiff, together with the 3 spoonfuls of sugar. Add a spoonful of the melted chocolate to the egg yolk and mix until completely incorporated, then add the rest of the chocolate. Add a few good spoonfuls of egg white to the chocolate sauce and mix again until smooth. Finally fold in the remaining egg whites carefully into the chocolate. This should be prepared before dinner so that it has time to chill in the fridge. We like to keep it in a big pot and then serve this at the table, but you can also just fill up little ramekins for your guests.
