Classic French Fruit Tarte

This year is a year of plums in the French countryside – the trees are falling over with them!! I tried to vary a little bit from my usual solution to this ‘problem’, which is to bake a clafoutis every day. This year, I tried one of the most traditional French desserts: a fruit tarte.

The great thing about a lot of French desserts is that they are made up of just a few simple ingredients – things you mostly have lying around in your cupboards. This is one of my grandmother’s recipes and I love it. The pastry is so very easy to make and so much better than anything you would buy ready made. We call it “pate sable”!

You can use any type of fruit, from apples to peaches to blackberries to pears.

Pastry Ingredients:

-200 gr of flour
-100 gr cold butter
-1 egg
-1 tablespoon of sugar

Filling Ingredients:

-Enough fruit to fill a 28 cm tart case
-1 egg
-1 heaped tablespoon of fine semolina (in a pinch, a tablespoon of flour)
-1 heaped tablespoon of sugar

I start by mixing together the butter and the flour until I have little breadcrumbs. Then mix the sugar and the egg and add to make the dough. Put in the fridge to chill.

Start heating the oven to 180° C.

Mix the egg with the sugar to make a light custard. Roll out the dough and line the tart case, spread out the custard and sprinkle the semolina on top. Add the fruit on top and bake for about 40 minutes, or until the case is golden.
