A flavourful garden kale salad with Tamari and sesame





When it comes to good cooking, I feel like there are two kinds of people. There are the ones who can cook by closely following trusted recipes (this is me), and then there are people who can open their fridge, see what’s inside and feel inspired to get creative and cook up something delicious. These people are the ones who can taste a soup or a salad dressing and know exactly what it might be missing, they recognise it might need a squeeze of lemon or a dash of cumin — they just have a natural knack for cooking. Thankfully, my husband is the latter.

Michael also has a passion for growing vegetables, and our sunny terrace is exploding with yummy produce right now. We’ve got salad greens, herbs, tomatoes, and chilli peppers all ripe for the picking. So last week Michael came into the kitchen with a basket of greens from the terrace and an idea for a tasty salad. For lunch that day he served up the most delicious salad I’ve eaten in a long time, so good that I asked him to make it again a few days later (and this time I took notes). It’s a wonderful way to eat dark leafy greens, the seeds give it an extra crunch, and the asian-style dressing adds a depth of flavour that goes beyond your typical salad. Yum! Here is the recipe:

Garden kale salad with Tamari and sesame dressing:

Salad Ingredients:

-One bunch of kale, roughly torn (you can substitute with other salad greens)
-One bunch of Okinawa spinach (again, any spinach will do)
-One small bunch of fresh mint
-One handful of fresh parsley
-One handful of fresh coriander
-One red bell pepper, chopped (coincidentally, a pepper is called a capsicum here in Australia)
-Half a fennel bulb, thinly sliced
-One chilli pepper, finely chopped (optional)
-A sprinkle of sesame seeds
-A small handful of sunflower seeds
-Nasturtium flowers and leaves

Salad Dressing:

-2 tablespoons tamari
-3 tablespoons Japanese rice vinegar
-2 tablespoons olive oil
-1 teaspoon toasted sesame oil
-1 teaspoon grated fresh ginger
-½ garlic clove, grated
